"Traditional gourmet cuisine is the soul of our regions, mushroom picking, gardening, local butchers, friendly hunters, … made it come to life in our homes where we would roast on an open fire for a few guests or for family members. Cooking all through the seasons was a gift from mother Nature and infused our food with authenticity. This philosophy still drives us and what we share in our restaurant today".

Our Michelin-starred gourmet restaurant opens out onto the magnificent park of La Chapelle Saint Martin. It comprises 4 elegant and tastefully decorated rooms as well as a large terrasse with unique views of the Limousin countryside. Drawing from the traditions of a heritage craft, the beauty and delicacy of the restaurant's plates are an ode to regional artists and factories, including the iconic Bernardaud.

Gilles Dudognon's cuisine is characterized by generosity, simplicity as well as his knowledge of products and cooking techniques. His time spent with Jean-Marie Amat, from 1979 to 1983, shaped him into the Chef he is today.
After spending 15 years travelling around France and the world (the Roux brothers in London, Château de Locquénolé in Brittany, the Chiberta in Paris with Philippe Da Silva,...) his efforts and hard work were rewarded with his first Michelin star in 1986, at only 24 years old.
Our restaurant team and Maître d'Hôtel, Stéphane Briand, are delighted to share with you a selection of the best French wines, including a range from organic vineyards.
We also pride ourselves on our range of natural wines made by craftsmen whose approach is about respecting their lands' authenticity by working without pesticides, sulphites as well as manually weeding and harvesting their crops.
